Is there any way you can move a piece (using a key or button or something) vertically
up or down in a model without having to drag and drop the piece out and up? I
am working on a large build and just had to replace some 6x8 plates with 6x10
so it threw my whole model off a little bit and am trying to fix it in the most
efficient way possible.

You can use the WASD keys (configurable; step depends on the Grid; direction
depends on the camera angle), or the arrow keys in the Translation tool (https://studiohelp.bricklink.com/hc/en-us/articles/5411126626199-Translation-tool
).

That being said, the dedicated forum for Studio and PartDesigner is https://forum.bricklink.com/
(hover over the red Studio icon on every page, then click “Studio Forum”).

Please search the forum for your question before posting a new one (the search
box is in the very dark grey banner).
There’s indexes of known bugs and suggestions that you can browse first:
Studio: https://forum.bricklink.com/viewtopic.php?f=4&t=5579
PartDesigner: https://forum.bricklink.com/viewtopic.php?f=10&t=5589

And read/search the help pages: https://studiohelp.bricklink.com/hc/en-us/

things on Studio and am kinda overwhelmed
