I would recommend using the train track element.

attach" the reasonable ability to remove at some point?

with the uv protected plexiglass and all

Staple baseplates to the board and then build on that.

There are some timber tables available that have Lego baseplates inside them
already.

Agree, I did this, cutting them nicely squared and screwing them finely (hiding
the screw head), then building on the baseplates.

Can you drill appropriately sized holes, inser 1/2 technic pins, and then attach
the baseplates or bricks to them?

I like the double sided tape tabs that are made for putting hooks on painted
walls. No residue that I have noticed.
