This set contains 3 sets, however when I parted out 66674, it listed all of the
parts and the big box, but it did not include the component sets' instructions
or boxes.

Is there any way to include those in the inventory of 66674 so they don't
have to be added separately when parting out?

That is a general issue when you part out any combination pack. The combined
set does not have instructions of its own. And when you part out the sets in
a set, you only part out the pieces (and minifigures) and not the boxes or instructions
as those are not treated as parts.
