I'm pulling my hair out trying to work out what i've done to cause this.

When adding sets or minifigures i don't have this issue at all but for parts
i do.

I'm sure it's probably a really simple fix but i can;t seem to work it
out

You'll notice the add button is greyed out.

Try picking a colour on the right hand side first and see if that works
