| I’ve just started sorting the rest of my mini figures and adding them to my store
I’ve got some that are complete - so I’ve listed them as complete
I have some that are missing just one piece (the hair for example) - I’ve listed
them as a mini figure but noted the missing piece
Then I’ve got lots of minifigure parts that are far from completing a mini figure
My question is, do people generally buy mini figure parts or is it better to
try hoard and build up full mini figures?

Listing incomplete minifigures is not allowed. Otherwise I could have listed
much more than I currently have. I think BL admins shut down a few shops that
had listed incomplete figures.
You should break them down or hold them back if you expect more inventory to
come in to complete them.

People buy both complete figures and parts. Figures must be complete as per the
inventory.

Yes, people do buy minifigure parts quite frequently.

It depends on the minifigure part and whether there is demand for it. Sometimes
a buyer will want to buy a set of parts which mostly consist of the following,
in no particular order:
Legs assembly
Torso assembly
Head
Headgear
Mostly torso and legs assemblies are sold as complete. Some people have figured
out relatively safe ways to disassemble torso and legs assemblies, although this
is not for the amateur seller who has no experience taking them apart. The hips
assembly is particularly delicate where the legs attach to the hips. It is often
difficult or impossible to take them apart without bending or breaking the pins
where the individual left or right leg attaches to the hips attachment points.
I would recommend that you stick to selling complete assemblies unless you come
across already disassembled torsos or legs in bulk lots you purchase from some
bulk LEGO reseller.
Arms in the torsos are sometimes removable although that also varies depending
on what era they were manufactured in. If you want to take apart any minifigure
assembly to break it down into individual arm parts, you should ask on the forums
first. Sometimes there just isn't a lot of demand for individual leg, arm,
hips, or hand parts, so you may wind up with a lot of stock that just sits in
your inventory and sells slowly or not at all.
It can be tough figuring out how to sell a minifigure, although generally, if
a minifigure part is missing something, you should break apart the minifigure
into it's parts as I listed above, with any other parts comprising it listed
individually.
It's hard to say whether you'll sell a particular item, it really depends
on what the buyer is looking for.

I’ve already chosen a few that I’ll try hold on to as I get more inventory but
the rest I’m going to sell in parts.
Definitely not going to try breaking down assemblies.

You can't sell incomplete minifigures.
In my experience:
Complete minifigs sell faster.
All minifig parts sell eventually.
