I have instant checkout, but I have seem on other stores that there is a box
on the last page of ordering that allows Buyers to leave the order open to be
able to add parts and then I would have to invoice them.

I can not find how to do this. Can someone help?

you would have to add a manual shipping option instead of instant checkout which
buyers can choose to leave the order open
