How do you change the order status to "completed"?
Only options are Pending, Processing, Read, Packed.
There used to be more options (Shipped, Completed) but thise don't usually
show up anymore.
What is the trick to get those status options to show up?

If the order has a payment status of Paid then it can be changed to Shipped or
Completed.

Did the buyer pay onsite for this order or offsite?

if the order was paid offsite but taxes were involved you cant mark it has shipped.
the only legal way to fix it is to refund the buyer and have them pay onsite
so that bricklink can collect the applicable tax otherwise your pocketing the
tax money which is a big no no

Seller should stop at shipped.

The buyer should mark at received or completed.
