So I noticed that some people use some sort of rubber mallet to pound their Lego
plates/bricks down. Does anybody know what the best mallet like that would be
for Lego building?

They are small mallets, and the people who use them give small hits
I think it’s also mostly used for glued models… or at least big models in dumb
bricks (statues…) (well, no much use with Technic or complex builds).

Ok. I was just wondering because I was going to be building a minifig sized model
of my local library, and it's going to be in a public setting. I don't
want to glue the model because I'm a purist. The model will be in a case,
so hopefully it'll be ok.

I have found that my 3 pound rubber coated weight makes a good mallet. However,
for getting LEGO pieces to fit tightly, I have found that my feet actually work
better.
Another technique is to use a rolling pin, but as with using my foot, this requires
that the pieces I am trying to fit tightly have a large enough surface area.
Usually when I need to get the pieces to go down into a tight fit, I am dealing
with an area of the structure that has a large flat area. If I am building bottom
up, at each layer, I can use a rolling pin or put a piece of wood over it and
stand on it.
