Is there a way to see an inventory which is “pending approval” (when you’re not
the submitter)?
Or at least a way to know why it’s pending?

I can’t find either….

Yes go to Catalog main page, find section What's New, column "More" there
you have "Pending approval". There is everything what is pending: items, images,
invetories, change requests.
