why not write into your terms
  that they can use any currency accepted at bit-pay to pay via bitcoin and then
give a small incentive if you prefer that method of payment?

Once it is universally accepted as a valid currency, I would reconsider my response.

Should have put this all in one!

I WILL gladly accept .99 Silver for orders ( rate at $1 = 0.0351ozt)

and large orders .999 Gold ($100 = 0.0627ozt)

Sure the first few will make big money,
Their have been others they all crumbled & lots of folc lost money - I read one
"bitcoin" chap lost almost 1/2million USD.

When I first stumbled on weusecoins I almost asked what you just did, here, then
I dug a little - I'll see if I can find a very good piece on this.

They make a big deal of Fiat currencies of being a scam. To which I agree BUT

Just because Fiat Currencies are a scam DOES NOT mean bitcoin isn't a scam also.
